Revitalization of the Holešovice Market marks another important milestone. The contractor – Konsit – officially handed over the renovated historic building of the slaughterhouse exchange in Prague.

In a unique heritage building that has undergone a demanding restoration, the future tenant, Zátiší Group, is now finishing technical works and interior preparations for its new restaurant.

The renovation of the Holešovice Market continues and in recent years has required investments in hundreds of millions of crowns. The renovation of the slaughterhouse amounting to 250 million crowns is one of the key projects, which show how historical heritage can be sensitively adjusted to the needs of a contemporary metropolis. The completed construction is now followed by the phase of interior and technological works conducted by the future operator.

“The Holešovice market has enormous potential that the city management has overlooked for many years. The reconstruction of the former slaughterhouse is a great example of how we are returning neglected historical buildings owned by the city to their original splendour and meaningful purpose. We have now successfully takenover the building from the contractor and the future tenant has started to implement specific technical modifications for the upcoming restaurant. We do not focus solely on the repairs, but also on the overall revitalization of the market area to transform it into a modern, lively and economically sustainable place for the people of Prague. We have so far invested 93.3 million crowns in the gradual reconstruction of halls (7, 8, 9, 11, 22, 27, 28, etc.),“ said Adam Zábranský, Prague City Councilor for Property, Transparency and Legislation.

“The Slaughterhouse Exchange is one of the most valuable historical buildings of the Holešovice Market and its renovation has been an extremely important project for us from the beginning. We are bringing this unique building back to life and at the same time giving it a new function that continues the tradition of a meeting place for people. Thanks to the cooperation with Zátiší Group, an exceptional gastronomic concept is being created here, which will fundamentally expand the offer of the Market and become another natural center for social events. We understand that the opening is happening later than we originally expected, and we are approaching the whole situation with the utmost responsibility. However, today we can say with certainty that the Bursa (Exchange) will be fully operational next year and will offer visitors an experience that we believe is worth the wait,” said Tomáš Hübl, Chairman of the Board of Directors of the Prague Exhibition Grounds.

In 2025, the Holešovice Market recorded 2.99 million visits (+9.8% year-on-year). According to the strategic development plan of the Market, approved in the ending election period, the area can generate over 200 million crowns per year for the city budget once all phases of the reconstruction are completed.

“Holešovice Market is one of the most interesting places in Prague and we want the top-end gastronomy to help encourage visitors come here naturally again, and not just drive by. We chose the name Bursa for the restaurant, referring to the original golden inscription on the front of the building. Bursa will continue the tradition of the building, where merchants and guests have met for generations, and will offer honest cuisine and good beer in one of the most beautiful historical spaces of the area. We want it to become a lively meeting place for the residents of Holešovice and Karlín districts and at the same time the reason why visitors from all over Prague will head to the market,” added Vojtěch Demeter, restaurant manager and representative of Zátiší Group.
